Some of the reading I've done seems to suggest that Mercon V transmission fluid is not fully synthetic and is actually a syn-blend. Is this true? And if so, what is a good full-synthetic fluid?

I am 99.9% sure it is not, only a partial synthetic. Whatever Ford recommends will be a synthetic blend.

BUT...I think you can get full synthetic Mercon V though, Mobil 1 being my preferred brand.

Motorcraft's 'Mercon-V is a semi-synthetic fluid. Other brands of M-V compatible fluid are not necessarily so.

Pro, at the top of the page it says "Mobile Mercon V Synthetic Blend ATF" are you sure Mobil1's MV is a full synthetic? I have double checked and realized that regular Mobil1 full synthetic atf is not compatible with MV, which struck me as kinda strange because that would mean M1 left the MV market out in the cold for a full synthetic.

Anyways, I'll throw in with Steve on this one, Amsoil would be my pick for a full synthetic fluid that is compatible with MV.
